Above is a natural size reproduction of eggs collected from one run of White Le[?]horns during one week on a metropolitan farm. These are all "hen" eggs and may be sold as one grade. In England these eggs would be separated into three grades as follows:— 2¼ oz. and over (special); 2 oz. and under 2¼ oz. (standard); and 1¾ oz. and under 2 oz. (pullct). One dozen 1¾ oz. eggs will weigh 21 oz., while one dozen 2 oz. eggs will weigh 24 oz., a difference of three ounces, or one and a half of the bigger eggs, short in every dozen eggs, as compared with the English hen standard. ...
