The bogs raised in the United States come principally from the southern and western states, where they are raised in vast numbers. The pork-packing industry is carried on principally in the eastern and western cities. In Jersey city the first process is the cutting up of the pork. A hog is first split down the back, then placed on a circular chopping-block about 6ft in diameter and about 2ft high. The operator, with a 22in cleaver, cuts the animal up into hams, shoulders, bacon, etc. As soon as the parts are severed, the attendants, by means of hooke, pass the pieces along to the trimmer, who trims the hams, etc., into shape.
